New Orleans School of Cooking
Today we had reservations for a cooking cleass at The New Orleans School of Cooking. Michael was our instructor and he told the story of the history of the Cajun and Creole people and the history of Louisiana as he taught us how to make jambalaya, gumbo, pralines, and bread pudding with rum sauce. He was very interesting and entertaining and we got to eat the food. The stove top pictures below are taken in the mirror on the ceiling so they look a little strange.
Michael and a helper from the class.
Gumbo.
Jambalaya.
Bread pudding and rum sauce.
And pralines.
Great food and we can't wait to try it ourselves!

Did every recipe start out with a dab of bacon grease? If not, I'd expect you to smell foul and walk out, Dad.

The gumbo did start out with a pound of lard.
